Couple's Recipe #3: The Luscious White Chicken Pasta.

No more a bachelor now :D, this is one of the first recipes my Wifey @bhava_dhaarani and I had tried out. As it turned out to be delicious and quite easy to prepare, we thought of sharing it with the community. So let’s get started.

Ingredients

  • Pasta – You can use any type of Pasta of your choice. Fusilli variety is highly recommended and our favorite as well.
  • Chicken – 150 gms
  • Garlic x 8 pieces (Peeled Off)
  • Mozzarella Cheese x 25 gms
  • Spring Onions Finely Chopped
  • Butter - 50 gms
  • Corn Flour - 3 Tbsp
  • All Purpose Flour - 1 Tbsp
  • Pepper Powder - 2 Tbsp
  • Milk - 2 cups
  • Chilli Flakes - 1 Tbsp
  • Salt to Taste
  • Oil – 1 Tbsp
  • Water

Ingredients (that’s how they look)

Pasta | Chicken | Garlic | Mozzarella | Spring Onions | Butter

Corn Flour | Maida (All Purpose Flour) | Black Pepper Powder | Red Chilli Flakes | Full Fat Milk | Salt


The Preparation.

The process will be demonstrated step by step with screen captures so you won’t have any trouble following this. The most easiest part of our recipe blogging style is you could simply follow the consecutive images below and get a clear understanding of what is being done. Off we go.

1. Make the Pasta Ready.

Unwrap the Fusilli from the pack and keep it aside. Light your gas stove (set a medium flame) and place the pan over it. Add 3-4 glass cups of water to it and also Add 1 Tbsp (viz 3 teaspoons) of Oil and 1 Tsp of Salt to the water. Wait until you see the bubbles popping up. [This cooking process is to prevent the pasta from being sticked up to the pan]

Boiling Water is almost ready.

Now add Pasta to the boiling water. This will take around 10 minutes for the Pasta to get completely cooked. To ensure whether it is cooked, try slitting a single pasta (you should be able do it effortlessly). Make sure it isn’t too hard nor too soft.

Add Pasta to Water.

Pasta is almost Ready.

Finally drain the water and keep the Pasta aside.

Drain Pasta.

2. Garlic Taste-Maker (Our Signature Style) - Optional*

This is totally a unique addition to the Chicken Pasta recipe. If you don’t prefer Garlic, you could kindly skip this step and move on to Step 3. If you’re a Garlic lover, we strongly recommend you to prepare this taste-maker addition. You won’t regret it.

All you have to do is chop the Garlic pieces into fine slices. Place a small pan on the gas stove with a (medium flame) and Add 2 Tsp of Oil to the pan. After two minutes, add the chopped Garlic to the pan and keep frying until they become “Golden Brown” and “Crispy”.

Chop the Garlic into fine pieces.

Heat Oil in the Pan.

Heat Garlic pieces until they turn Golden Brown.

You are done. Set them aside as we shall need it later.

3. Getting the White Sauce Done.

This is the critical part of this recipe as you will be spending most of the time on this procedure.
Place the saucepan on the gas stove (on a medium flame throughout the preparation), After two minutes add 1 Tbsp of Butter. (No Oil Required)

Add Butter to the Pan.

As the butter totally melts down, Add 3 Tbsp of Corn Flour and 1 Tbsp of All-Purpose Flour (Maida) to the pan and Keep sautéing for 2 minutes.

Add Flour to the Melted Butter on to the Pan.

Pour all the two cups of milk to the mixture and keep sautéing. Ensure you stir well until you get rid of bubbles formed in the sauce. Keep sautéing till the mixture turns to a thick fluidized form.

Add two cups of Full Fat Milk.

Keep sautéing until the bubbles are gone.

Add the Mozzarella Cheese and continue stirring until the sauce becomes even more fluidized.

Add Mozzarella.

As a final touch, Add Chopped Spring Onions, Pepper, Chilli Flakes and Salt to Taste to the mixture.

Add Pepper.

Add Chilli Flakes.

Keep Sautéing for at least 3 minutes and your white pasta sauce is now ready.

4. The Finale.

Now quickly add the Chicken Pieces to the White Pasta Sauce you just prepared.

Add Chicken.

Keep sautéing for 5 - 6 minutes.

Saute for at least 5 minutes.

Add the Cooked Pasta you prepared previously on Step 1 to the White Sauce Mixture.

Add Cooked Pasta.

Sauté for 2 minutes.

Saute for 2 minutes.

Finally, add the Garlic Taste-Maker seasoning you prepared in Step 2 to the mixture.

Adding Golden Fried Garlic.

Sauté for a minute.

5. The White Chicken Pasta is Ready.
